Do you roast the coffee here?

Yes, of course we do! It's in our name and we roast at least three days a week, every single week.

Do you roast the different flavors?

No, we start by roasting a premium mild coffee to a rich carmel color. The coffee is then combined with a small amount of natural liquid based flavor agent. As the coffee continues to cool, the liquid evaporates and the flavoring is absorbed into the bean leaving a wonderful favored creation.

Where did coffee come from?

Coffee originated in Ethiopia in the first century when the goats of some farmers noticed the brightly colored berries in which the coffee beans are stored and ate them. Noting the effects of the berries (the effects we now attribute to caffeine), the farmers took some for themselves. The berries were cultivated on plantation and, shortly thereafter, were transformed into a drink which prevented sleep. Coffee was originally exclusive to Muslim nations but was smuggled out and eventually found its way into the New World.

Where do your coffees come from?

All over the world! We have coffees from Indonesia, Central and South America and even some from Africa. They all have their own distinct traits; this means that every day, you can try a new coffee from a new part of the world and taste something unlike what you tried the day before.

What's the coffee like before you roast it?

Our beans arrive as heavy, green beans that taste nothing like coffee. The get their color, taste and lighter weight through the roasting process.

Is that burnt?

Our roaster is asked this question almost every time he roasts. Coffee doesn't get that coffee smell until it has had time to cool down. Until then, it's going to smell smoky and that's why it's easy to see why people think that each batch we roast is burnt. In short: it's not.

Do you roast the different flavors?

Is your Mocha Java coffee chocolate flavored?

No, it's a blend of two different unflavored coffee beans and, in fact, it's one of the world's oldest coffee blends.

What has more caffeine, a dark or light roast?

Lighter roasts have more caffeine. Coffee loses some of its caffeine (but definitely not all) as it's roasted, so our darker, longer roasted coffee has less caffeine than our lighter coffee which is roasted for a shorter amount of time.

How do you get your coffee blends?

There are two different ways to get coffee blends. One way is to blend the green beans and roast them together. Another way is to blend the beans after they have been roasted. We do both. Our Monaco Blend (a French roast) is roasted after the greens have been blended, but our Bed and Breakfast Blend is mixed after roasting the individual coffees separately.

What makes your decaf coffee "decaf?"

All of our decaffeinated coffees have been decaffeinated before they arrive at our coffee shop.

Is there any difference between coffees from different countries?

Of course! There are plenty of differences between the coffees of different countries. Aside from different roasts, coffees exhibit different traits based on the different countries that they're from. Indonesian coffees have a lower acidity, meaning a smoother, less acidic taste. African coffees, however, have a higher acidity and a bolder taste.

What's the best way to store coffee?

The trick is to keep the beans as far away from the actual making of coffee as possible. The green beans last far longer than roasted beans, and roasted beans last far longer in their whole-bean state than when they've been ground. The trick is to store ground coffee in a cool, dry place with an air tight lid.

Can you freeze or refridgerate coffee?

Definitely avoid refridgerating your coffee grounds. The dampness inside refrigerators tampers with the flavor and scent of the coffee. Freezing is not preferred, but store in an air-tight lid if necessary. Portion out the coffee and only take out what is needed; do not refreeze!
